RICH IN ANTIOXIDANTS
Tomatoes are one of the symbols of our Mediterranean diet, rich in micronutrients and antioxidants at the cost of very few calories. They are one of the best sources of carotenoids, especially lycopene, the well-known pigment that gives the typical red color and possesses powerful antioxidant properties. Scientific evidence shows that lycopene and other carotenoid antioxidants are better absorbed by the body when tomatoes are cooked. Tomato puree, being cooked, has a more readily available quantity of this antioxidant compared to regular tomatoes. The antioxidants it contains counteract oxidative stress, protect the eyes and skin, fight osteoporosis, and have a cardioprotective effect.
